Pomegranate molasses may be found in ethnic and health food stores. it's a sweet pomegranate syrup which may be used in beverages, salad dressing and here for a cake. Source: newspaper recipe Ingredients:
1 stick butter softened |
1 1/2 cups flour |
1 1/2 tsp baking powder |
1/2 cup milk |
3 tbs pomegranate divided plus 1 tsp more |
3/4 cup sugar plus 4 tsp more |
3 large eggs |
1 cup powder sugar |
6 tbs light ccream |
3/4 cup coarse chopped walnuts or pecans |
Directions:
1. Grease and flour a 9 inch square baking pan 2. preheat oven to 350F 3. Sift flour, baking powder and salt 4. Combine milk with 2 Tbs pomegranate syrup 5. Cream butter and 3/4 cup granulated sugar until light and fluffy 6. Add eggs one at a time 7. Add flour mixture in 3 batches to creamed mixture and combine well 8. Pour in pan 9. Bake until top is golden brown and tooth pick comes out clean in center about 30 to 40 misn 10. Cool 10 mins , turn cake onto rack and then turn cake right side up again 11. Whisk together the powder sugar, ceam and remaining 1 Tbs pomegrnate syrup 12. Brush over warm cake ketting it drip down sides 13. Heat nuts with the 1 tsp syrup and 4 tsp sugar and cook and stir until sugar coats nuts ( watch carefully as not to burn nuts ) 14. Sprinkle over top of cake |
