Pomegranate Jelly With Rose Cream |

A very refreshing treat on a hot summer's day. Ingredients:
1/2 liter fresh pomegranate juice |
1 cup water |
1 tablespoon lemon juice |
1/2 cup sugar |
8 g konnyaku powder |
1 cup whipping cream |
2 tablespoons icing sugar |
2 tablespoons rose water |
Directions:
1. Combine juice, water and lemon juice in a big pot. 2. Add in sugar and konnyaku powder. 3. Whisk, and Warm over medium heat till boiling point, and then bring to a gentle simmer for 2 minutes. Turn off heat. 4. Pour into moulds and let set in the refrigerator. 5. For rose cream, combine cream, icing sugar and rosewater and whip till soft peaks form. 6. To serve, unmould jelly and serve with a dollop of rose cream. |
