Polynesian Sweet and Sour Fish: L'a Momona a Paakai |

Ingredients:
1 ounce ginger root, peeled and minced |
4 ounces mirin |
1 ounce soy sauce |
2 1/2 pounds mahi-mahi, cut into 1/2-inch cubes |
oil, for frying |
7 ounces flour |
7 ounces water |
3 ounces soy sauce |
1 teaspoon sugar |
2 eggs |
1/2 teaspoon baking soda |
1 teaspoon garlic powder |
seasoned flour, as needed |
20 ounces sweet and sour sauce |
Directions:
1. Combine ginger, mirin, and soy sauce and marinate the fish for 30 minutes. Preheat oil in a deep-fryer to 350 degrees F. 2. Mix together batter ingredients. 3. When preparing an order, drain and dredge fish cubes in seasoned flour. Coat fish with the batter and deep-fry until golden brown. 4. In a bowl, gently toss one portion of fried fish with 4 ounces of hot sweet and sour sauce. Serve immediately on a warmed dinner plate. |
