Polynesian Cole Slaw? Well, probably not exactly from Polynesia, but this is a Cole Slaw with a Polynesian influence. Ingredients:
1/8 cup rice wine vinegar |
1/8 cup sesame oil |
1/4 cup coconut milk |
2 tablespoons of honey |
dash of mustard (for emulsification) |
1/2 teaspoon of chinese five spice |
1/4 teaspoon of ground ginger |
1 clove of garlic (minced) |
about 2 cups of cabbage (shredded) |
1/4 cup of red onion (shredded) |
1 carrot (shredded) |
1/2 cup of pineapple chunks. |
1/4 cup of cilantro |
Directions:
1. Combine the Rice Wine Vinegar, Sesame Oil, Coconut Milk, Honey, Mustard, Five Spice and Ginger in a medium bowl and whisk until combined. 2. Toss with the Cabbage, Onion, Carrot, Pineapple and Cilantro until well coated. 3. Let sit for at least 30 minutes in your fridge. 4. You can serve this as a side dish to Grilled Salmon, Mahi-Mahi, or with whatever you feel is appropriate. |
