Meatballs are not Polynesian and the sauce isn't authentic cuisine either. Just never mind. You'll find this to be one of your best appetizers ever. Quick and easy. from scratch meatballs |
2 lbs lean ground beef |
2 cups bread crumbs |
1/2 cup milk |
1 egg |
1/8 tsp garlic powder |
salt to taste |
for cooking from scratch meatballs |
1/4 cup flour |
6 tbs vegetable oil |
or: 2 lbs of ready made meatballs (plain, no flavoring) |
sauce |
13-1/4 oz can of pineapple chunks and the juice |
8 oz can tomato sauce |
2 green bell peppers (on the small side) cut into 3/4 inch squares |
3 tbs white vinegar |
Directions:
1. To make meatballs from scratch mix the first 6 ingredients in a large bowl and shape into 1 and 1/2 inch balls. Sprinkle the flour on a sheet of wax paper and roll the balls around to coat them so they stay together. Brown the meatballs in the oil in a skillet, medium high heat for 8 to 10 minutes, turning often. Set aside and keep warm. 2. OR ... warm two pounds of ready made meatballs in the microwave. 3. Combine the 4 sauce ingredients, bring to a slow boil, add the meatballs and simmer covered, for about 15 minutes, or until the bell peppers are tender-crisp. That can be done in a skillet or a crock pot. 4. If you use a crock pot don't overcook it. 5. Prepare yourself for rave reviews. |
