Polynesian Feast Meatloaf |

A nice change of pace from the same old meatloaf. If you can't find Chinese sausage ground pork may be used. Read entire recipe before starting. Ingredients:
1 1/2 lbs lean ground beef |
1 lb chinese sausage, ground |
2 cups breadcrumbs, dry |
1 (12 ounce) can evaporated milk |
2/3 cup chopped leek |
3/4 cup chopped carrot |
8 ounces water chestnuts, chopped |
1/4 teaspoon salt |
1/4 teaspoon pepper |
2 1/2 tablespoons char siu chinese barbecue sauce or 2 1/2 tablespoons hoisin sauce |
5 eggs |
Directions:
1. Preheat oven to 350 degrees. 2. In a large bowl combine all ingredients together. 3. Pack mixture into a ring mold. 4. Empty mold upside down upon a baking sheet that has been covered with foil. 5. Brush with extra Char Siu sauce. 6. Bake for 1 hour. 7. Cool slightly and garnish with browned pineapple rings and Maraschino cherries. 8. Place cooked rice in the center of the ring and serve. |
