A not-too-sweet and savoury dish with tender chicken and light spices that you're sure to love. My brother made this years back and it has been a favourite since! Wonderful over or alongside rice. Ingredients:
1 tablespoon olive oil |
1 teaspoon salt |
1 teaspoon paprika |
1/2 cup flour |
2 lbs chicken pieces (boneless or otherwise) |
1 cup orange juice |
2 tablespoons brown sugar |
2 tablespoons vinegar |
1 teaspoon basil |
1 teaspoon ground nutmeg |
1 1/4 cups sliced peaches |
Directions:
1. Heat oil at a medium temperature in a skillet large enough for all ingredients. 2. Mix the salt, paprika and flour in a pie plate or other shallow dish. 3. Coat chicken with flour mixture. 4. Add the coated chicken to the pan and brown both sides (about 5 min.). 5. Mix the rest of the ingredients EXCEPT THE PEACHES and add to the pan. 6. Simmer covered for 35-40 minute or until chicken is fully cooked. 7. Add the peaches and simmer for another 5 minute. 8. Enjoy! |
