It used to be most popular salad in Poland in the eighties. I don’t remember any holiday celebration or birthday party without the salad on the table in my childhood. It used to be my favorite one and I called it the green pea’s salad. Read more . Now when I’m grown old I make the salad at least twice a year. Me and my husband really enjoy it. Ingredients:
4 medium potatoes, cooked or steamed |
4-5 medium carrots, cooked or steamed |
1 large apple, tart (f.ex. granny smith) |
4 medium pickled cucumbers, chopped |
canned green peas, drained (or frozen, steamed about 8 oz.) |
6 medium eggs, hard-boiled |
1 teaspoon mustard (not whole grain) |
4 tablespoons mayonnaise/or 1 cup of greek style yogurt |
fresh ground black pepper, sweet paprika powder, salt to taste |
Directions:
1. Peel cooked potatoes, carrots and the apple. Dice them and pour into a large bowl. Add peas and diced pickled cucumbers and eggs. Combine mayonnaise, mustard and spices. Stir the mayonnaise and mix gently with the remaining ingredients. Taste some to check if need more pepper or salt. 2. Let rest in refrigerator for at least 30 minutes or overnight before serving. Serve with fresh bread and cold cuts. |
