Polish Tuna Melt Sandwich |

There I was, a lunch to make, and a can of tuna in my hand. I don't know what got into me, but I just wasn't ready for the same old tuna salad sandwiches. I opened the fridge, and here's the result. Try other ingredients, ie fontina cheese, pepperonconi, sliced tomato. Yeah...before you say it...I know this sounds Italian, but I'm part Polish...so there! Ingredients:
12 ounces canned tuna, drained |
1/4 cup red onion, diced |
4 large green olives, garlic stuffed and diced (we like mezzetta) |
1/2 cup mayonnaise |
1 tablespoon pepperoncini juice |
6 slices provolone cheese |
12 slices italian bread |
Directions:
1. Preheat broiler. 2. Mix first 5 ingredients in a bowl. Taste and adjust as desired. 3. Spead tuna mixture on 6 slices of bread and cover with cheese slices. 4. Spread a little mayo on other 6 slices. 5. Place all 12 slices on a baking pan and broil until cheese is melted and starting to brown. |
