From the Junior league of Palo Alto comes ths family recipe for sausafge stew perfect for cold weather, before football games or skiing. Ingredients:
4 tbs butter or oil |
1 lg onion thick sliced |
1 head of cabbage, cut in 8th lenthwise |
2 lbs quality polish sausage cut into 1/4 inch thick slices |
2 to 3 tart green apples, washed and unpeeled and quartered |
3 tomatoes ,quartered |
2 bay leaves |
1 tbs white vinegar |
pinch of sugar if apples not overly sweet |
Directions:
1. Saute onion in butter till soft in a Dutch oven 2. Add cabbage slices and sausage 3. Add tomatoes and apples with bay leaf and vinegar 4. Cover tightly and simmer for about 2 hours 5. Before serving, skim off fat, remove bay leaf and correct seasoning 6. Serve in bowls with a good crusty bread 7. If there is any left, flavor improves with age! |
