Polish Doughnuts Or Pczki |

Here is just one recipe that I have for Pączki. Pączki, are traditional Polish doughnuts . Pączki is the plural form of the word pączek. Ingredients:
1-1/2 cups milk |
2 (1/4 ounce) packages dry active yeast |
1/2 cup sugar |
1/2 cup soft butter |
3 egg yolks |
1 whole egg |
1 teaspoon salt |
1 teaspoon vanilla |
a splash of rum or vodka or can replace the vanilla |
1 tbsp. orange zest, finely grated |
1/2 teaspoon nutmeg |
4-1/2 cups flour |
plum or cherry jam or your choice of preserves / jam |
note: make certain the jam that you use does not have chunks of fruit as you will find it is impossible to pipe into the doughnut. |

confectioners' sugar to sprinkle on top |
Directions:
1. Scald milk and allow to cool to lukewarm. 2. Add yeast and stir. 3. In a large bowl, beat sugar and butter until fluffy. 4. Add eggs, salt, vanilla, Rum/Vodka, orange zest and nutmeg. 5. Add flour and yeast-milk mixture gradually, beating well. 6. Cover and let rise in a warm place until doubled in size. 7. Punch down and let rise again. 8. Roll out dough, on a floured surface, 3/4 inches thick. 9. Cut out 1-1/2 inch circles. 10. Options: Either cut into circles and deep fry or top half of a circle with 1 tsp. jam, cover with the remaining circle and seal the edges. I prefer to deep fry circles of dough and after they are done, allow to cool then pipe the jam into the centre of a cooked doughnut. 11. Heat oil to 375°F. 12. Fry, turning once, to a medium golden brown. 13. Drain on paper towels and sprinkle with confectioners' sugar. 14. This recipe can make 24 doughnuts, more or less. |
