These pancakes have a unique flavor and texture that make them really something special. They have less flour than traditional pancakes so are not so cake-like. They can be eaten on the go without syrup and are very tasty. My whole family loves them. Ingredients:
1 1/3 cups flour |
1 tablespoon sugar |
1/2 teaspoon salt |
1/2 teaspoon cinnamon or 1/2 teaspoon apple pie spice |
1 egg |
1 cup milk |
1 tablespoon vegetable oil |
2 medium apples, peeled and thinly sliced |
confectioners' sugar |
Directions:
1. In a a bowl, combine flour, sugar, salt and spice. 2. In another bowl, lightly beat egg; add milk and oil. 3. Add to dry ingredients and stir until smooth. 4. Fold in apples. 5. Pour batter by 1/2 cupfuls onto a lightly greased hot griddle and spread to form 5 inch circles. 6. Turn when bubbles form. 7. Cook the second side until golden brown and apples are tender. 8. Sprinkle with confectioners sugar. |
