This is very good. Great as a side dish, appetizer or main dish with a nice salad. Enjoy Ingredients:
4 cups canned chicken broth |
1-1/2 cups yellow cornmeal |
4 tablespoons butter |
1 cup shredded mozzarella cheese |
salt and pepper to taste |
2 cups spaghetti sauce with meat |
1/4 cup grated parmesan cheese |
basil leaves for garnish |
Directions:
1. In a 12 cup glass measuring cup combine broth and corn meal then microwave on high for 15 minutes until very thick stirring occasionally. 2. Stir in butter, shredded mozzarella, salt and pepper. 3. Line a jelly roll pan with waxed paper then oil the paper. 4. Spread polenta mixture in an even layer in pan then let cool while preparing sauce. 5. With a cookie cutter or knife cut shapes from cooled polenta. Arrange on serving platter then top with sauce. 6. Microwave at high for 10 minutes until both polenta and sauce are hot. 7. To serve sprinkle polenta and sauce with parmesan then garnish with basil leaves. |
