IT IS SUPPOSE TO BE A STARTER BUT I MAKE DOUBLE QUANTITY AND SERVE IT AS A LIGHT LUNCH WITH THE GIRLS Ingredients:
250 g instant polenta |
1 lt vegtable or chicken stock |
125 - 250 ml grated parmesan cheese ( i love pecorino with it - a nice mix) |
200 g fresh mozzarella, sliced |
topping |
100 g salami |
20 black olives, pitted |
150 g mixed cocktail tomatoes (or quarter salad tomatoes) |
salt |
gound pepper |
30 - 45 ml pine nuts, toasted (optional - i never leave it out) |
Directions:
1. PREHEAT OVE3N TO 180C 2. MAKE POLENTA ACCORDING TO PACKET INSTRUCTIONS USING STOCK INSTEAD OF WATER (EXTRA FLAVOUR ...YUM) 3. STIR THROUGH PARMESAN (AND PECORINO IF YOU USE IT) 4. SPREAD POLENTA ONTO A BAKING TRAY 5. TOP WITH MOZZARELLA, SEASON AND BAKE FOR 10 MINUTES 6. SCATTER TOPPING OVER AND SERVE IMMEDIATELY 7. ENJOY :) |
