Polenta Crackers

Zesty homemade crackers;good with soup or cheese
Ingredients:
1 1/2 c boiling water
3/4 c polenta meal or cornmeal
1 tsp mixed herbs
(for these, i used an onion and garlic seasoning blend)
1/2 tsp salt
2 t soy margarine
Directions:
1. Bring water to a boil. Add polenta and herbs, and cook until
2. creamy. Remove from heat, and add salt and margarine.
3. On a well-oiled cookie sheet, spread out batter until thin.
4. Score into pieces with a sharp knife.
5. Bake in a 350 degree oven 20-25 minutes,
6. until crispy and brown.
7. Cool and serve.
