This comes from my Pol Martin Cookbook Supreme Cuisine I also like this served on toast with bacon. Ingredients:
8 large eggs |
1 tablespoon parsley, chopped |
1 teaspoon fresh chives, chopped |
1/2 cup gruyere cheese, grated |
1 tablespoon dijon mustard |
salt and black pepper |
Directions:
1. place eggs, herbs, cheese and mustard in bowl, mix well. 2. heat butter in large nonstick frying pan over medium-low heat. 3. pour egg mixture into pan and cook for 1 minutes. 4. season, stir 5. keep stirring until eggs are done to desired consistency. 6. serve. |
