A great side dish ready in under 30 minutes! No need for adjustments, this is great just as printed. I hope you enjoy as much as we do.
Ingredients:
penne pasta (cooked according to package enough for 4)
2 tablespoons olive oil
2 garlic cloves, smashed and chopped
1 red pepper, chopped
2 tablespoons fresh parsley, chopped
12 whole greek olives
1 tablespoon capers
2 anchovy fillets, chopped
2 large tomatoes, peeled and diced
1/4 teaspoon cayenne pepper
1/2 cup parmesan cheese, grated
salt and black pepper
Directions:
1. heat oil in saute pan over medium heat.
2. add garlic, and parsley, cook 2 minutes.
3. add olives, capers, and anchovies, mix and cook 2 minutes.
4. incorporate tomatoes and cayenne pepper. season and cook for 6 minutes over medium heat.
5. add hot pasta and cheese.
6. mix and serve.
