Quick and easy vegetarian lunch or light dinner, easily made vegan. Make it even faster using pre-cut veggies. Ingredients:
1 cup canned corn, drained |
1 large tomato, diced |
2/3 cup green onion, chopped |
1 cup broccoli, diced |
1 cup cauliflower, diced |
1 large carrot, diced |
6 tablespoons mixed sprouts |
1 teaspoon dried basil |
1/2 cup fat-free thousand island salad dressing |
6 whole pita pockets, cut in half |
Directions:
1. Mix together all of the ingredients but the pita bread. 2. Fill pita pockets with the veggie filling. 3. Serve chilled. |
