POBLANO CHEDDAR SWEET POTATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Baxter Estate in Euless, Texas in 1989. Ingredients:
2 large sweet potatoes |
2 large yukon gold potatoes |
2 poblanos roasted, peeled, seeded and chopped |
1/2 cup shredded cheddar cheese |
1/2 cup milk |
1/2 stick butter unsalted |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Peel potatoes and boil in water until done then drain and put into mixing bowl. 2. Mash potatoes with milk and butter then season with salt and pepper. 3. Fold in poblanos and cheese then serve. |
