Poached Salmon with Horseradish Sauce |

Ingredients:
1/4 cup fat-free mayonnaise |
1/4 cup plain fat-free yogurt |
2 teaspoons prepared horseradish |
1 1/2 teaspoons chopped fresh or frozen chives |
1 1/2 teaspoons lemon juice |
4 cups water |
1 teaspoon peppercorns |
1 lemon, sliced |
1 carrot, sliced |
1 celery stalk sliced |
4 (6-ounce) salmon fillets |
lemon wedges (optional) |
fresh celery leaves (optional) |
Directions:
1. Combine first 5 ingredients. Cover and chill. 2. Combine water and next 4 ingredients in a large skillet; bring to a boil over medium heat. Cover, reduce heat, and simmer 10 minutes. Add salmon to skillet; cover and simmer 10 minutes. 3. Remove skillet from heat; let stand, covered, 8 minutes. Remove fish from skillet. Discard liquid and vegetables. 4. Serve with horseradish mixture. If desired, garnish with lemon wedges and celery leaves. |
