Poached Salmon with Horseradish Sauce

Ingredients:
1/4 cup fat-free mayonnaise
1/4 cup plain fat-free yogurt
2 teaspoons prepared horseradish
1 1/2 teaspoons chopped fresh or frozen chives
1 1/2 teaspoons lemon juice
4 cups water
1 teaspoon peppercorns
1 lemon, sliced
1 carrot, sliced
1 celery stalk sliced
4 (6-ounce) salmon fillets
lemon wedges (optional)
fresh celery leaves (optional)
Directions:
1. Combine first 5 ingredients. Cover and chill.
2. Combine water and next 4 ingredients in a large skillet; bring to a boil over medium heat. Cover, reduce heat, and simmer 10 minutes. Add salmon to skillet; cover and simmer 10 minutes.
3. Remove skillet from heat; let stand, covered, 8 minutes. Remove fish from skillet. Discard liquid and vegetables.
4. Serve with horseradish mixture. If desired, garnish with lemon wedges and celery leaves.
