Poached Salmon Spinach Salad |

Ingredients:
2 tablespoons extra virgin olive oil |
1/2 lb fresh spinach, cleaned |
1/4 teaspoon salt |
1/8 teaspoon black pepper, freshly ground |
1/2 cup yellow onion, chopped |
3 fresh tomatoes, peeled, seeded, and cut into 1/2-inch pieces |
2 (4 ounce) salmon fillets, poached (leftovers from poached salmon with cucumber dill sauce) |
1 tablespoon flat leaf parsley, coarsely chopped (optional) |
Directions:
1. In a skillet, heat 1 tablespoon of the oil over medium heat. 2. When hot, saute the spinach for 1 1/2 minutes. Mix in the salt & pepper and divide among 4 plates. 3. Heat the remaining tablespoon of oil in the skillet. 4. Saute the onion and tomatoes over medium heat until the onion is tender, about 5 - 6 minutes. 5. Arrange the salmon on the spinach and top with the tomatoes and onion. Garnish with parsley, if using. |
