Ingredients:
2 quarts water |
1 large onion, quartered |
1 teaspoon salt |
1/2 teaspoon pepper |
2 1/2 pounds grouper fillets, cut into serving-size pieces |
fresh parsley sprigs |
Directions:
1. Combine water, onion, salt, and pepper in a large Dutch oven, stirring well. Bring mixture to a boil; add fish, and cook 15 minutes or until fish flakes easily when tested with a fork. Remove from heat. 2. Transfer fish and onion to a serving platter using a slotted spoon. Garnish platter with parsley sprigs, and serve with fish stock, if desired. |
