Poached Egg On Cheesy Grits |

This is one of my Moms favorites and we all love grits Doesn't have to be tomatoes with it, but looks pretty.Five minutes start to finish but prepared and served correctly looks like a million. First had this in a B&B. Ingredients:
poached egg on cheesy grits |
1/3 cup quick grits (not instant) |
1 cup water |
salt |
pepper |
1/4 cup grated sharp cheese |
poached egg |
fried tomatoes, spinach or asparagus |
Directions:
1. Cook grits according to package directions. 2. They come out beautifully in the microwave if you just put the water, salt, grits and cheese into a pyrex casserole and zap on high for 3 or 4 minutes. 3. Stir a dollop of sour cream in and set to cool slightly. 4. Meanwhile, poach an egg and fry some tomatoes, spinach or asparagus. 5. Make a little mound of the grits on a plate, top with grilled vegetable and nestle the egg on top. 6. Sprinkle with a little ground pepper. |
