It's as if mother nature made up for this fish's buttugly apprearance by giving it the sweetest flavor. A simple dish we used to call poor man's lobster . Ingredients:
1 lb cusk fillets, cubed into 1 inch pieces |
1 pint water |
salt and pepper |
drawn butter |
Directions:
1. Heat water in a shallow saucepan. 2. Add S& P. 3. Add cusk pieces. 4. Poach until fork tender and cooked through about 3-5 minutes. 5. Serve with drawn butter. |
