1 kg sulphur free dried apricot |
1 cup sugar |
2 vanilla beans, split |
1 pinch salt |
Directions:
1. Soak apricots in cold water for 1/2 hour or more. 2. Transfer with soaking water to large pan. 3. Add sugar, scrape seeds from vanilla beans. 4. Add seeds and pod to the pan. 5. Bring slowly to a simmer. 6. Cook gently till very tender - about 40 minutes. 7. Cool then strain. 8. Place strained off juice into pot and reduce over heat by 1/3 or. 9. till syrupy. 10. Cool then serve apricots and juice with cream. |
