Plum Sauce

savoury sauce for meats
Ingredients:
6 lbs satsuma plums
3 lbs sugar
3 pints vinegar
1 teaspoon cayenne (or chilli, don't overdo it!)
1 tablespoon salt (maybe a teaspoon)
1 tablespoon mixed spice
1 tablespoon whole cloves (can put in muslin bag)
2 tablespoons grated fresh ginger
Directions:
1. Boil all ingredients together until stones separate (not long)
2. Strain through sieve and bottle when cold.
