This is another great way to use up the leftovers from Christmas, in this case the Christmas Plum Pudding. I came up with this recipe while staying at my Aunt and Uncle's home in Dublin, Ireland. The measurements for this are just a guess, so do what you think is best in terms of your own personal tastes and what you like. For instance, if you think honey might be too sweet, maybe add a little dash of sugar instead. Ingredients:
1/2 cup oats (quick cooking) |
1 cup low-fat milk |
1 dash salt |
50 -100 g plum pudding (cooked and cooled) |
1 teaspoon honey |
Directions:
1. In a microwave safe bowl, add the oats and salt. 2. Add the honey and milk. Crumble in as much plum pudding as you like and mix. 3. Put in the microwave for 2 1/2 minutes to 3 minutes depending on your microwaves wattage. Make sure to stir every 1 minute to check on the consistency. 4. Serve with a dash of cold milk or cream. |
