This is a difficult but delightful dessert for ending the evening. Enjoy with a refreshing cup of hot tea or coffee. Ingredients:
12 fresh plums |
12 sugar cubes |
3 t. butter |
2 c. sifted all-purpose flour |
2 c. riced, cold cooked potatoes |
1 tsp. salt |
2 eggs, well beaten |
3/4 c. dry bread crumbs mixed with 3 t. melted butter |
Directions:
1. Remove pits from prunes carefully without breaking plums apart 2. Replace pit with a sugar cube 3. Cut batter into flour until mixture resembles coarse corn meal 4. Add potatoes and salt 5. Stir in eggs and knead dough on a lightly floured board until smooth 6. Roll out dough 1/4 inch thick 7. Cut dough into 3 inch squares 8. Place 1 plum in each dough square 9. Moisten edges of dough with water and pinch to enclose plum completely 10. Roll the dumpling between floured hands until it is ball shaped 11. Carefully drop dumplings into simmering water, only a few at a time 12. Cook uncovered for 15 minutes 13. Drain carefully and roll each dumpling in buttered crumbs |
