Plum Ginger Glazed Chicken |

If you prefer skin on your chicken that will work just fine for this recipe too, in fact it will result in a nice sticky carmelized skin. I wrote the recipe without to make it a bit healthier. Ingredients:
4 lbs skinless chicken pieces |
salt |
fresh ground black pepper |
3/4 cup plum preserves (about 6 oz) |
1 inch piece fresh ginger, peeled and grated |
2 tablespoons olive oil |
4 fresh rosemary sprigs |
15 peeled garlic cloves, lightly mashed |
2 fresh plums, pitted and sliced very thin |
Directions:
1. Preheat oven to 375°F. 2. Lay chicken pieces on a baking sheet. Season generously with salt and pepper. Add the remaining ingredients and toss together so that chicken is fully coated. 3. Bake for 40 inutes, or until the chicken is nicely browned and juices run clear. |
