Plum Cobbler With Cornmeal Topping |

After buying 1/2 bushel of plums on sale, I am plummed out having made kuchen, dumplings, claflouti and nice a great cobbler. It's pretty and delish! The cornmeal adds a slight crunch to the topping and we do like it! Read more ! Ingredients:
one dozen large purple and red plums mixed, ripe but mushy about 4 to 5 pounds plums |
3/4 cup sugar |
1 tbs cornstarch |
2 tsp vanilla |
cornmeal dumpling topping |
2 1/2 cups flour |
1 cup cornmeal |
1 cup sugar |
1/2 tsp salt |
1 heaping tablespoon of baking powder |
2 sticks butter or margaine |
1 cup half and half , buttermilk or milk or as needed |
Directions:
1. Wash plums, dry, pit and cut into small cubes 2. Mix sugar and cronstarch and mix into plums, 3. Add vanilla and set aside for 10 minutes. 4. Make topping. 5. Into a large bowl combine sugar, flour , salt and baking powder. 6. Cut in cubed cold butter or margarine into a crumb like mixture as for pie dough 7. Add enough liquid to make a moist dough that clings together, but may be a bit sticky. 8. Place plums with any liquid into a 9x 13 pan. 9. Form dumplings with hands and place evenly acrooss plums in pan. 10. Bake in a preheated 375 oven about one hour or until topping is golden and plums juices bubble up 11. Cool on rack about 1 hour before serving 12. Of course serve with whipped cream, ice cream etc. |
