Plum Apricot Crisp Gluten-Free |

Disclaimer: My measurements are always estimates. This is a gluten-free recipe (caution: Quaker Oats is gluten free but made in a facility that processes wheat) that even my gluten-eating relatives enjoyed eating, which is always a good sign. In the ingredients,3 ounces quaker oatmeal means two packages(those little 1-serving ones). I used the non-high fiber type. The fruit I used was organic and quite small so you may wish to adjust the number of fruits Ingredients:

5 plums |
3 ounces quaker maple and brown suger high-fiber oatmeal |
1 cup sugar |
1/4 teaspoon cinnamon |
1 7/8 teaspoons nutmeg |
3/8 cup butter |
1/2 cup sliced almonds |
Directions:
1. Preheat oven to 350. 2. Use a round cake pan and lightly grease with butter. 3. Chop fruit and mix with spices. 4. Mix oatmeal with about 1/2 cup sugar and almonds. Crumble all but 1 tablespoon remaining butter into oatmeal mix and stir to make a makeshift crumb topping. (Note: due to lack of flour it wont resemble crumbs, but just make sure butter is well integrated but still crumbly). 5. Place fuit into pan, top with oatmeal-crumb mix. Melt remaining tablespoon butter and spoon over top. 6. Bake 40-45 minutes. Tastes great with vanilla ice cream! |
