Plantains, plantains, plantains oh my..I just love sweet plantains. You can make so many dishes with it. Here is yet another dish with sweet plantains. You can eat this dish with ice cream or as a side to rice and beans. Read more . Enjoy Ingredients:
3-4 very ripe plantains |
2 tbsp. whole cloves |
1 tbsp butter(optional) |
2 tbsp of oil |
3/4 cup of granulated sugar + 1 tsp |
3/4 cup of water |
1 cinnamon stick |
Directions:
1. Peel Plantains and slice into 1/2 rounds diagonally 2. On each side of the cut plantains stick a whole clove, set aside 3. In a frying pan over medium heat add the oil. 4. To the hot oil add a tsp of sugar. 5. One the sugar caramelizes, immediately start adding the plantains & move around in the oil and sugar . 6. Fry each side until golden brown. 7. When plantains are cooked, leave in frying pan, lower the heat and add the cinnamon stick. 8. Mix the water and the sugar and pour this over the plantains 9. Cook for 6-7 minutes until the sugar has turned an amber color and is thick and gooey like syrup. 10. Do not let this dish get dried out because the sugar will get sticky and hard. 11.
