Plantation Peanut Brittle |

An old-time favorite! Ingredients:
2 cups sugar |
1 cup light corn syrup |
1/2 cup water |
1 dash salt |
2 cups shelled peanuts |
1 1/2 tablespoons butter |
1 1/2 teaspoons vanilla |
2 teaspoons baking soda |
Directions:
1. Combine sugar, syrup, water and salt in a heavy saucepan and cook over low heat to 230 degrees F. 2. Stir in peanuts and cook to 302 degrees F. 3. Remove pan from heat and blend in butter, vanilla, and soda. 4. Pour hot mixture ont buttered marble slab or stoneware platter. 5. When cool and hardened, break into pieces. |
