This recipe comes from the Gone With The Wind Cook Book - Famous Southern Cooking Recipes . There is a note in the foreward which I love: Gone With The Wind told of a style of living. as well as a romantic drama, A way of living, playing, and eating that thrilled us all. Ingredients:
4 eggs, separated |
2 cups corn kernels (canned, chopped fine) |
1/2 teaspoon salt |
pepper |
1/2 cup light cream |
2 tablespoons butter |
Directions:
1. Beat egg yolks until thick and lemon coloured; add corn, seasonings, and cream. 2. Fold in stiffly beaten egg whites. 3. Melt butter in frying pan; pour in 1/4 of the egg mixture. Cook slowly over low heat. When omelet is brown on the bottom, place in a moderate oven (180C) and bake 10-15 minutes or until firm on top. 4. Remove from oven, fold, and serve immediately. |
