Ingredients:
1/4 cup cornmeal |
1 teaspoon salt |
1 cup boiling water |
2 eggs, beaten |
1 cup milk |
1 teaspoon baking powder |
2 tablespoons butter or margarine, melted |
2 cups chopped cooked chicken |
Directions:
1. Combine cornmeal and salt; add water, stirring constantly until well blended; cool. 2. Combine eggs and milk; add to cornmeal mixture, stirring gently until smooth. Stir in baking powder, butter, and chicken. Pour into a well greased 1-quart casserole; bake at 375° for 40 to 45 minutes. 3. Note: Two cups chopped cooked turkey may be substituted for chicken. |
