This recipe is from Central America/Honduras. I found it on an Operation Rice Bowl flier. It's amazing how such simple ingredients are sooo tasty. Ingredients:
3 plantains, (soft to touch) |
1/4 cup of sugar |
1/2 teaspoon cinnamon |
1/2 cup cooked black beans |
2/3 cups of vegetable oil |
Directions:
1. Wash and cut the plantains into three pieces. 2. Boil in some water until soft, drain and mash the plantains. 3. Place the beans in a blender and blend until you have a soft puree. 4. Fry the beans in a little oil and then add the sugar and cinnamon. 5. Heat the remaining oil in another frying pan, add the plantain mixutre, one tablespoon at a time, and spread with a fork to form it into the shape of a small pancake. 6. Fry for 3 minutes. 7. Place about 1 heaping tablespoon of the bean mixture on each pancake and fold, shaping into a turnover. 8. Fry for 3 minutes longer on each side until brown. |
