This is an Ecudorian soup requiring plantains. Chosse green plantains, if not your soup will be too sweet. Ingredients:
6 small firm green plantains |
2 c milk |
1/4 lb queso blanco cheese (mozzarella will do), coarsly grated |
1 small onion, finly chopped |
2 t parsley, chopped |
1/2 tsp kosher salt |
1/2 tsp crushed peppercorns |
1/8 tsp cumin |
1/4 tsp prepared garlic |
1/2 t dried oregano |
Directions:
1. in a meduim saucepan 3/4 full of water, boil plantains for 2. 30 minutes. 3. Drain and reserve 2 C liquid. 4. Puree the plantains in food processor. 5. Slowly pour in the milk, and rrocess until just smooth. 6. Warm the reserved liquid over low heat and wisk in puree until smooth. 7. Stir in remaining ingredients and heat through. |
