Adapted from the Joy of Cooking Ingredients:
1/3 cup butter (shortening) |
2/3 cup sugar |
1/4 teaspoon lemon juice (lemon rind) |
1 3/4 cups flour |
2 1/4 teaspoons baking powder |
1/2 teaspoon salt |
1 -2 egg, beaten |
1 1/3 cups mashed fried plantains (bananas) |
1/2 cup chopped pecans |
1/2 cup chocolate chips (optional) |
Directions:
1. Cream together butter and sugar 2. Mix in lemon juice and eggs 3. In separate bowl, mix flour, salt and baking powder 4. Slice and fry plantains then mash it up to a pulp 5. Mix plantain with butter-sugar-eggs 6. Gradually add flour mixing well 7. When all flour is mixed in, add chopped nuts (and chocolate chips) 8. Mix well 9. Bake 1 hour 350 degrees. |
