The latest carrot creation from my kitchen, good plain, glazed or decadently frosted! Makes a two-layer 9 cake. Ingredients:
2 eggs |
1/3 cup sugar |
1/2 cup brown sugar |
1/2 cup canola oil |
1 tbsp vanilla |
2 1/2 cups coarsely grated carrot |
1/2 cup crushed pineapple, undrained |
1 cup flour |
1/2 cup whole wheat flour |
1 1/2 tsp baking soda |
1/2 tsp baking powder |
1/2 tbsp cinnamon |
1/2 tsp ground ginger |
1/4 tsp ground nutmeg |
Directions:
1. Preheat oven to 350F, grease and flour two round cake pans. 2. Beat together eggs, sugars, oil and vanilla in a large bowl. 3. Fold in carrot and pineapple, mixing well. 4. In another bowl mix flours. baking soda, baking powder and spices. 5. Beat flour mix into the wet ingredients, mixing thoroughly. 6. Bake 30 minutes, cool completely in pans on a wire rack before frosting. |
