Plain muffins and three variations. Ingredients:
2 cups white flour |
2 tablespoons sugar |
3 teaspoons baking powder |
2 tablespoons fat (like butter, shortening, or vegetable oil) |
1/2 teaspoon salt |
1 cup milk |
1 egg |
Directions:
1. Follow muffin method of mixing.[I think Grandma meant to combine the dry and wet ingredients separately, then stir all together until just moistened leaving plenty of lumps. Finally, cook at 400 F for 20 to 25 minutes.]. 2. Variations:. 3. Whole Wheat Muffins - Substitute 1 c whole wheat flour for 1 c white flour. Dates or raisins may be added, if desired. 4. Jelly Muffins - Plain muffins plus jelly. Fill pans half full of batter, add 1/2 t of jelly to each pan, cover with rest of batter and drop another 1/2 t of jelly on top. 5. Date Muffins - Plain muffins plus 1/2 c chopped dates. Add chopped dates to dry ingredients. |
