The thin, crispy Italian cookie that is a must have during the holidays. Ingredients:
6 eggs |
1-1/2 cups sugar |
1 cup melted butter |
2 tbsp. anise |
3-1/2 cups flour |
4 tsp. baking powder |
*can substitute anise for 2 tbsp. vanilla, or 3 tbsp. lemon extract |
Directions:
1. Preheat pizzelle iron and spray with some cooking oil. 2. Beat eggs. Add sugar, butter and flavoring. Beat in flour and baking powder. 3. Drop by heaping teaspoonful, or pipe in with a pastry bag onto pizzelle iron. 4. Bake for 20 - 45 seconds. Each iron is different so be careful how long it is on. They cook quickly. They should be a nice medium golden brown. 5. Remove with a spatula to a wire rack to cool. Store in an airtight container. |
