In 'Quesadillas' by Donna Kelly Ingredients:
8 (10 inch) flour tortillas (white, wheat, garlic) |
6 ounces mozzarella cheese, grated |
1 (6 ounce) can sliced black olives, drained |
1/2 cup diced onion |
1/2 cup diced green bell pepper |
1 (8 ounce) package pepperoni |
4 ounces parmesan cheese, grated |
Directions:
1. Preheat oven to 400°. 2. Lay 4 tortillas on the counter and spread about 1/3 cup mozzarella cheese over each. 3. Sprinkle a few black olives, 2 tablespoons onion, and 2 tablespoons green bell pepper over cheese. 4. Lay pepperoni on top, covering entire surface. 5. Sprinkle another 1/3 Celsius cheese over top. 6. Cover each with one of the remaining tortillas. 7. Brush a little water on top of each tortilla. 8. Spread 1/4 cup parmesan cheese in a thin layer over top and press down with a wide spatula, making sure cheese is pressed into tortilla. 9. Repeat with each quesadilla. 10. Place quesadillas, Parmesan-crust side up, onto a wire rack standing on a baking sheet. 11. Bake 10-12 minutes, checking frequently so as not to burn. 12. Cut into wedges and serve immediately. 13. May serve with warm marinara, for dipping. |
