Found this in the Neighborhood Shopper printed by The Dallas Morning News. It is so good, so easy and low calorie. The meat can be pepperoni, Canadian bacon, bacon, Italian sausage, chicken, you get the picture... And the aroma while simmering is wonderful. My wife said next time make a huge batch so we can have leftovers.
Ingredients:
1 tablespoon olive oil
1 cup red onion (diced)
6 ounces canadian bacon (diced)
2 cups pasta sauce
1 (14 1/2 ounce) can diced tomatoes with garlic, oregano and basil (do not drain)
1 1/2 cups bell peppers (frozen or fresh, diced)
14 1/2 ounces beef broth
1 (6 ounce) jar sliced mushrooms (drained)
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1 dash cayenne pepper (optional)
3 tablespoons parmesan cheese (grated)
1 1/2 cups mozzarella cheese (grated)
Directions:
1. Heat oil over medium heat in a 3 quart saucepan.
2. Add onion and saute' until translucent.
3. Add meat and stir-fry about 3 minutes.
4. Turn up heat to medium-high.
5. Add pasta sauce, canned tomatoes and broth.
6. Stir well.
7. Add peppers, mushrooms, oregano and basil.
8. Stir well.
9. Bring to an early boil and reduce heat to simmer.
10. Simmer for 10 minutes.
11. Turn off heat, stir in parmesan cheese.
12. Ladle into bowls and top with mozzarella cheese.
