Canadian Living Magazine (Feb 2005). My kids love the pizza flavours in this soup. They like to top their own bowls with shredded mozzarella or cheddar cheese. The original recipe appears below, but I like to add some kidney beans, pasta, Parmesan and basil. Play with it and have fun. For a thinner soup, add more broth.
Ingredients:
1 tablespoon vegetable oil
1 onion, chopped
2 garlic cloves, minced
2 cups mushrooms, sliced
1 cup ham or 1 cup pepperoni, diced
1 teaspoon oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 green pepper, chopped (optional)
28 ounces diced tomatoes
2 cups chicken stock (or vegetable)
1/4 cup tomato paste
Directions:
1. In large saucepan, heat oil over medium-high heat.
2. Saute onion, garlic, mushrooms, ham, pepperoni, oregano, salt and pepper until tender and the mushroom liquid is evaporated, about 6 minutes.
3. Add green pepper (if using), tomatoes (undrained), stock and tomato paste. Bring to boil.
4. Reduce heat and simmer, covered until flavours blend, about 10-15 minutes.
5. Sprinkle each bowl with mozzarella cheese when serving.
