I am already thinking FOOTBALL! Here's a tailgate recipe. Ingredients:
for filling |
8 ounces sausage |
1/2 medium onion, finely chopped |
garlic to taste, finely chopped |
1/2 cup pizza sauce |
1 cup mozzarella cheese, shredded |
2 tablespoons parmesan cheese, grated |
for puffs |
3/4 cup water |
6 tablespoons butter |
1 teaspoon dry italian seasonings |
1/2 teaspoon onion powder |
1/4 teaspoon dry mustard |
3 eggs |
3/4 cup of all purpose flour |
1/4 cup pepperoni, finely chopped |
Directions:
1. For Filling: 2. Cook sausage until done, crumbling as it cooks; 3. Cook chopped onions and garlic with sausage; 4. Drain any grease or fat from sausage/onion combo; 5. Mix cheeses and pizza sauce with sausage/onion combo and set aside (mixture should be thick). 6. For Puffs: 7. In a medium saucepan, combine water, butter, oregano, onion powder, and dry mustard; bring to a boil; 8. Add flour all at once, stirring vigorously; 9. Cook and stir till mixture forms a smooth ball; 10. Remove from heat and cool 10 minutes; 11. Add eggs, one at a time, beating well after each addition until smooth; stir in pepperoni; 12. Drop dough by well-rounded teaspoonfuls (you should get about 24 balls) 2 inches apart on a lightly greased baking sheet; 13. Bake in a preheated 400 degree oven for 25 minutes, or till golden and firm; 14. Cool, split in half, fill with sausage mixture. |
