Crowd pleaser, ideal for picnic or tailgating because of no mayo Ingredients:
1/2 container grape tomatoes |
1 medium red onion |
10 fresh button mushrooms, sliced |
1 green pepper, chopped |
1 package pepperoni |
1 lb fresh mozzarella cheese |
20 leaves of basil, thinly sliced |
3 gloves minced garlic |
1 lb wagon wheet pasta, cooked and drained |
salt and pepper |
dressing |
1 teaspoon oregano |
2 tablespoons red wine vinegar |
1/2 cup extra virgin olive oil |
Directions:
1. Combine tomatoes, onion, garlic, mushrooms, bell pepper, pepperoni, cheese, pasta and basil in a big bowl. 2. Whisk salt, oregano, vinegar, olive oil and salt and pepper together. Pour over pasta and chill. |
