This recipe goes over well with kids! Serve with Italian sausages and potatoes fried with green peppers and onions. Ingredients:
3 eggs |
1 tablespoon butter |
2 tablespoons water |
3 tablespoons pizza sauce |
1/2 cup shredded mozzarella cheese |
2 tablespoons parmesan cheese |
salt and pepper |
pepperoni slice (optional) |
canned mushroom slices (optional) |
green pepper, diced (optional) |
onion, diced (optional) |
Directions:
1. In a large bowl whisk together the eggs and water. 2. In a large non stick skillet melt butter over medium heat and pour in egg mixture. 3. When eggs are almost set on surface spread pizza sauce over half the eggs. 4. Add the cheeses and any optional ingredients you wish. 5. Cover, remove from heat and let stand for 2 minutes. 6. Cut in half and serve with Italian sausages for a different breakfast or a great dinner! |
