This recipe from BBC Good Food makes a great light dinner served with salad and crusty bread. If you have any left over, it makes a great sandwich. Ingredients:
1 tablespoon vegetable oil |
1 onion, chopped |
4 slices bacon, chopped |
6 eggs (or 1-1/2 cups egg substitute) |
100 ml milk |
2 pinches dried oregano |
75 g cheddar cheese, grated |
2 tomatoes, sliced |
salt |
ground black pepper |
Directions:
1. Heat the oil in a small non-stick frying pan over medium heat. 2. Fry the onion and bacon for 5 to 10 minutes. 3. Whisk together the eggs, milk and a pinch of oregano, and season with salt and pepper to taste. 4. Tip the egg mixture into the pan, stir quickly, lower the heat and cook for about 8 minutes, then scatter over the cheese, tomatoes and a second pinch of oregano. 5. Transfer to the broiler for 2 to 5 minutes until the top is firm and golden. 6. Allow to cool, then slice. |
