Adapted from a Julia Le Clerc recipe from an edition of the NZ Womans Weekly. It is great to serve with soup. Ingredients:
3/4 cup pasta sauce |
1/2 cup salami, diced |
3/4 cup parmesan cheese, grated |
2 cups self raising flour |
salt and pepper |
2 tablespoons fresh oregano, chopped |
1 egg, beaten |
1/4 cup olive oil |
1 cup milk |
Directions:
1. Heat oven 180 C. 2. Spray loaf tin. 3. Sift flour into large bowl. 4. Add salt, pepper and oregano. 5. Stir to combine and make well in the centre. 6. Add eggs, oil and milk. 7. Stir just to combine and form a smooth batter. 8. Swirl through pasta sauce mixed with salami and cheese. 9. Pour into tin, bake 50 minutes 10. Ready when inserted skewer comes out clean. |
