Pizza Arancini( Italian Rice Balls ) |

This is just my version of the popular Italian appetizer. Traditionally, they are formed then rolled in bread crumbs, and I just decided to just eliminate that part and added the bread crumbs to the rice mixture. Ingredients:
2 cups cooked rice(white or brown) |
1 cup fine bread crumbs |
2 cloves garlic, minced |
1 cup pepperoni, minced |
about 4-5oz fresh mozzarella, diced small |
1/4 fresh parmesan, grated or nothing to it parmesan pizza topping |
2 eggs |
1t fresh italian herbs, minced |
2t roasted red pepper or sun dried tomato pesto |
fresh ground black pepper |
favorite marinara for dipping |
Directions:
1. In small glass bowl, beat eggs See Photo. Add Italian herbs and pesto and mix well. 2. Set aside. 3. In larger bowl, combine remaining ingredients. See Photo 4. Add egg mixture and combine well. 5. Spoon mixture onto baking stone, cast iron, or prepared cookie sheet. (I suggest using a small cookie scoop and packing full) See Photo 6. Bake at 450 for about 20-25 minutes until golden brown and heated through. See Photo |
